Gluten-free Pizza Dough

Want to make awesome GF Pizza? Keep reading…. Like many families these days, we have a gluten sensitivity in our house. In fact my daughter has been eating gluten free for over 6 years. In that time we have played with many different recipes for pizza. If you have tried to make gluten-free dough before you will know it’s not always that easy. Well this recipe is relatively easy and with practice & the right tools you can make pizza shop quality pizza!

A few years ago I was told by someone in a big name weight loss program that you can do gluten free dough using equal parts greek yogurt and GF flour. At first I was skeptical but it worked!

What I learned over the coming few years were a few tweaks that ended up producing really tasty Gluten Free Pizza! They are captured in the recipe below!


Ingredients for one 10-12” pizza:

• 1 cup gluten-free all-purpose flour (I like Bob Red Mills all purpose 1-1)

• 1 cup plain Greek yogurt

• 1 teaspoon baking powder

• 1 teaspoon Italian Seasoning (I like Reedz BBQ Italian Pizza Seasoning available at https://reeedzbbq.com/products/italian-pizza-seasoning)

• Pinch of salt

Instructions:

1. Preheat your oven to 525°F

2. If you have a pizza stone you can preheat it now. I use the new Pampered Chef Medium Pizza Stone & Pizza Peel which is safe up to 550F.

3. In a large bowl, whisk together the gluten-free all-purpose flour, baking powder, Italian seasoning and salt.

4. Add in the Greek yogurt and stir until a dough forms.

5. Kneed dough a few minutes in the bowl until all ingredients are blended and dough is soft & smooth.

6. Place dough on a sheet of parchment paper. Sprinkle dough lightly with All purpose Gluten Free flour.

7. Using rolling pin, roll dough into round base 1/4” thick (that thickness has worked best for me)

8. Edges may be cracked slightly. Working gently, you can pinch back into smooth round edge with your fingers

9. I like to cut the parchment to 1” outside the dough

10. Top the pizza dough with your favorite pizza sauce and toppings, leaving a 1/2-inch border around the edges.

11. Bake the pizza (on parchment paper) in the preheated oven (on preheated stone or use pizza pan) for 10-14 minutes, or until the crust is golden brown and the cheese is melted.

12. Remove the pizza from the oven and let it cool for a few minutes before removing the parchment paper.

13. Slice & serve!

Enjoy your homemade gluten-free pizza!

Tip – make Garlic Cheese Fingers! You can use 2/3 of the dough for pizza base and save 1/3 to roll out into a small pizza base. Top dough with Garlic butter spread. Add cheese and sprinkle with chopped bacon (option). Cook following pizza instructions above (may be done sooner). Cut into fingers and serve with Donair sauce!
