Tender grilled chicken cooked on kabob skewers and served with rice, in a pita or on a salad! The flavours in this recipe when cooked over the flame of your favourite grill are sure to please friends and family!
Ingredients
- 2 lbs boneless chicken thighs
- 1/4 cup vegetable or olive oil
- Zest of 1/2 lemon
- Juice of 1/2 lemon
- 1 tablespoon dried oregano
- 2 cloves minced garlic
- 1/2 teaspoon salt
- 1 teaspoon onion powder
- 1/2 teaspoon fresh cracked black pepper
Instructions:
- Prepare the Chicken Thighs:
- Cut the boneless chicken thighs into 1-inch chunks.
- In a large bowl, combine the boneless chicken thighs, lemon zest, lemon juice, minced garlic, dried oregano, salt, onion powder, and fresh cracked black pepper. Toss the chicken in this mixture, ensuring each piece is evenly coated. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, marinate for a few hours or overnight.
- Preheat the Grill:
- Preheat your grill to medium heat about 350-375°F. Make sure the grates are clean. You can also lightly oil the grates (oil on paper towel works well – use tongs to hold the paper towel)
- Grill the Chicken Thighs:
- Remove the marinated chicken thighs from the refrigerator and thread onto skewers leaving no space between pieces to ensure even cooking. I prefer metal flat metal skewers (can be purchased online or in many middle eastern markets) but you can use wooden (make sure to soak them in water first to prevent burning).
- Place the chicken skewers on the preheated grill. Close the lid and grill for approximately 18-20 minutes per side (turning frequently), or until the internal temperature reaches 165°F (74°C). The thighs should develop a nicely slightly charred exterior and be fully cooked on the inside.
- Rest and Serve:
- Once the chicken thighs are done, remove them from the grill and let them rest for a few minutes. This helps the juices redistribute throughout the meat, keeping it moist and flavorful.
- Serve:
- Consider serving them with a side of tzatziki sauce, pita bread, and a Greek salad for a complete meal. or with your favorite side dishes.
