These potato slices have been a hit since I learned the technique from a friend while in University! They are a regular feature at our family table and are quick to dissappear when they come out… Heck even our senior dog loves them!
Ingredients
- 4 medium potatoes
- 2-3 Tablespoons Canola or Olive Oil
- 1/2 Teaspoon Kosher Salt
- 1/2 Teaspoon Coarse Black Pepper
- 1/2 Teaspoon Paprika
- 1/2 Teaspoon Garlic Powder
Instructions
- Preheat oven to 400F
- Slice potatoes lengthwise 1/8 inch thick – trying to make as even thickness as possible. This will ensure even cooking. I typcially disgard and compost the first and last slices (skin one side) as they typically don’t cook the same as the rest.
- Place slices in a large bowl and rinse. Rinse the slices well with cold water – this removes some of the excess starch.
- Dry potatoes and bowl well with paper towel or clean kitchen towel.
- Drizzle oil over potatoes working to ensure all sides of all slices are covered.
- Mix spices – combine salt, pepper, paprika and garlic powder in a small bowl
- Sprinle seasoning over potato slices – working a bit at a time, tossing slices in the bowl so that all sides of all slices are evenly coated.
- Carefully place slices on the middle rack of your oven. Do so by sliding it out so that you can arrange slices in a single layer across the whole rack. See picture below. Be careful as rack will be very hot. Slide rack back in to oven and cook potatoes
- Roast potatoes – After 15 mins slide rack out and turn potatoes over – its best to use tongs for this step. Return rack and cook for another 5-7 mins. Continue flipping the slices every 5-7 mins until evenly cooked and golden brown. Total cooking time is typically 25-35 mins but ovens can vary. If some slices are cooking faster as they are thinner you can remove and place in a covered metal bowl until serving.
- Allow to cool slightly – Once all potatoes are cooked golden brown place in a metal bowl to cool for 1-2 mins before serving!
